What do I do now?
I haven't ever been interested in anyone romantically before, but an anomaly has recently presented itself in the form of one female physics major that I study with. At first, I wasn't really interested in her at all. After studying with her and spending time with her for a few months, I found I was attracted to her and would like to pursue this, but have no idea where to proceed. How do I communicate my interest in her? Should I spend time with her in a non-school related capacity?

Oh good lord, just turn to her and ask her if she would be interested in attending a social activity with you say "how about dinner and a movie?"

Try to ask her if she would be interested in have a dinner with you first.
