First of all, Happy New Year's. I just have a question. What's New Year's about, is it one of those things for couples? Like, if someone is with someone else, should they bring in the New Year together? Do you have an SO and go to separate parties, or one go to a party and the other doesn't? I'm just wondering what's normal for future reference.

It depends. My GF is a professional escort and had to spend the New Year with a client. I wasn't happy that she'd had sex with him but she split the 1000 euros with me so that's OK.
Okay, to your first question: New Year's, like any other holiday, is about spending it with those who are closest to you. This can include significant others, but it isn't limited to that. It could be close family or even close friends. It's all about spending the time together.
As for your second question, no, they don't have to. Sometimes, they just want to spend it with friends and/or family. And sometimes the relationship hasn't grown enough for them to bring them to those parties due to the fact that person hasn't met their friends and family yet.
Your last question: I have a boyfriend, and last night we spent the night in watching Willy Wonka and the Chocolate Factory eating some snacks and waiting to watch the ball drop. Then, we kissed at midnight (I asked him to, and he stayed up special for it despite my telling him it was okay if he was too tired to). But this past one is the only time I've ever been in a relationship throughout New Year's, so I can't compare it to much else.
Go to separate parties on NYE? No way. We would go to other parties together. It's 23 years now and we have spent every one together.
