Coolant is a mixture of half antifreeze and half water. In a pinch it is OK to add only water or only antifreeze. (On some cars, it is difficult to see the full line on the coolant reservoir. Bounce the car up and down while looking to see how full the reservoir is.)

The main big difference that I remember is that coolant has different freezing and boiling points. So if it gets under 0°C and all you have is water, then the water can freeze your engine block, whereas coolant won't freeze. Coolant also lasts longer since it won't boil as quickly. There are other benefits to coolants, I'm sure - but those were the main ones I remember.

You pretty much have got it.
Anti-freeze is almost exclusively made of Ethylene Glycol with dye added to give it color. It not only depresses the freezing point, but also elevates the boiling point. A mix of DISTILLED water and antifreeze protects your engine to something like -30 Celsius. I'm not sure what the protection ceiling is.
On top of that, antifreeze provides corrosion protection. This is part of the reason you need to make sure you use distilled water in the cooling system. Tap water has minerals and other things that can corrode and block passages in the cooling system. This will reduce the cooling system efficiency and theoretically cause engine damage if it got too bad.
You want to flush your coolant system every couple of years. Its no different than the principal of changing oil and brake fluid really.
To be completely honest, engine cooling is very effective for modern day cars. The only time's it can become and issue are high performance engines on unusually hot days. Even when I am running my bikes hard on 100 degree plus days, the cooling systems have yet to fail me, I've tried.
