Isn't it obvious....exclusivity is when both parties agree not to see other people....they want to commit to each other, because they have strong feelings for each other......it ain't rocket science.
Actually, it requires several kinds of sciences to say: sociology, psychology and anthropology....

It takes energy to get to know someone. Being exclusive helps this process. Yes, ultimately it is like an interview process toward a commitment.

Its true that we have bonding hormones to help us fall in love and help us commit. The purpose of it is so children will have the best chance of survival in a family unit. Wolves do it too and so did the dinosaurs. That's why they survived for so long

Exclusivity is to insure availability. It is the same principal as private property. Not everybody believes in it, which really pisses off those who do. Economics plain and simple.
Depends on what stage of the relationship you are in. If you just met and are on your first date and discussing committment then its time to pretend you need to take a pee and get the hell out. If you have had a few dates and her underwear is on the floor next to your bed it is not unreasonable for a girl to want an exclusive commitment. Girls have an natural "nesting" instinct and are wired for commitment, dudes have a natural "mating" instinct. Its just the way it is.
"Exclusivity" is a fairly new dynamic in the scheme of things, at least for men, anyway. Before church and state dictated marital laws, men of means and ways .had many lovers King Solomon had 700 wives and 300 concubines as an example.
There are many people in todays society that are not exclusive and love many at one time. I suspect that those in polyamorous relationships will soon be coming out and demanding equal rights that monogamous couples are entitled to just as the homosexual community had to do to advance their dynamic.
