Formal vs Personal talk need men's opinion

I've met these types of men who after just asking my name start talking personal like we know each other for a long time, make jokes and tease me and it breaks the ice kind of and makes me feel like I know them and I've met these types of men who always talk formal with respect and never crack a joke always on the tip of their toes. Those who talk formal makes me feel like they are hiding something and those who talk personal seem very open. Although I like when a guy is more personal it has its disadvantages as well as being formal has its own advantages. For men does it depend on each guys personality or does it have something more to it? What does it mean when a guy is talking personal vs guy being very formal. Does being formal mean more respect or trying to be distant. And personal does it mean he doesn't care or is he relaxed and feels cool around me? What does it mean? Thank you!
