Stuck in a rut

Me and my hubby have been married for 3 months but we have been together for almost 10 years. Since we were 14. I love him so much but lately our relationship has become boring. I work a 9-5 office job and he's a chef so we are on complete opposite schedules. This had taken quite a toll on our sex life. By the time he gets home I'm so tired because I have to be up in 6 hours. When we do have sex that also has become routine. We can't always do it when we want to because we have roommates.
Our date nights are always the same thing. Dinner at a movie. We have dinner out and go see a movie. We cook at home and rent a movie. And any other mix match you could make.
So my questions are: how can we spice up our sex life/make time?
What are somethings we can do to liven the relationship?
What do you guys do for dates other than dinner and a movie?

Once a month we do a mini trip. Wine tasting, microbrews, flea markets, hiking Moab, clothing optional hot springs, mountains to play in snow, city to listen to music... We live in a town of 2,000 so to us any of that is a big treat. So pick a town, get on the computer to find some event that is happenning, and go. Oh and there is something about a hotel room that makes people horny.
