Wow, what a lot of pressure. I would probably be inclined to compare her to that Disney character that asks the mirror on the wall to compliment her every day...

Depending on the girl and perhaps the situation as well, such a question can have different 'likeable' answers.
If she's your girlfriend - then she'll want sometime sweet.
If she's just a friend - then give her something witty.
If you have any 'inside' jokes with her, perhaps you can compare her to something that only she would understand - i.e. make it more personal, sorry of the top of my head I can't really think of an example without writing an essay to explain myself LOL
The best thing for most occassions with any girl is that you can't compare her to anything, because nothing is as unique or special or whatever, in comparison to her. That'll definitely put a smile on her face!!
