Just tell her thanks for the "poke" or whatever the heck they call it" and then make the rest of your email (brief) focused on whatever it is that caught your eye about her. Then leave it with a question or something that she can respond to. It's just like having a conversation through the written word.

Wakeup's suggestion is a good one. If you leave her with a question, she'll feel obligated to answer it.
Start with something along the lines of what I said, end with something asking about her profile/activities , and relate it to something in your profile.
