I would just tell her Mom what I thought of her.

hm. Again, I have to say it depends.
But the fact that she tells you that her mom is wrong is a good sign. It is, however, often true that if you tell an untruth often enough, people will start believing it no matter how strong willed. I'd be worried about that only if she spends a lot of time with her mom.
also.. don't worry about being 'successful' enough for her mom, or not earning enough or silly stuff like that. If you did earn a ton, would you want that to be the reason she likes you? She's above that kind of stuff, and if she wasn't you probly wouldn't want that kind of person anyway, so don't allow yourself to worry about earning less than her or not being attractive enough. She sounds like she really likes you. that's all you need.
