Update: We are meeting on Sunday for coffee to exchange our stuff. I know there isn't any hope for me except to try to be cool and be friends with her. If anyone here can help me with a strategy to win her back, I will name my first born after them even if it is Gaylord Focker.
"Strategies" to win someone back is not the way to go. You sounded like you were cool with the situation, understood it and were okay with moving on. Now you want to play some game to get her back? Don't do it. Honestly, nothing good can come out of it. Just meet, exchange your stuff, and be pleasant to her.
Doing anything but being yourself does a disservice to you and to her.

I thought I was cool till we decided to meet for coffee and exchange stuff. Now I am anxious and hoping that something I do or seeing me will change her mind. I still feel like I could have a future with this girl but maybe I am being delusional.
Don't meet her for coffee. Tell her something came up and it would be better if she could leave your stuff out and you can just come drop her things off, or vice versa. Or just tell her that you'd rather not see her anymore and it's easier if you guys just drop your things without seeing each other. Say that she's right, and it's best that you two just don't speak anymore. You have to project to her, that you are okay with never seeing her again, because that will make her wonder why/what's changed. Good luck.
