i'm a humanist and quite anti religion but it does sound very much like a major conflict between her religious beliefs and her natural desires, don't want to get in to a big religious debate but this is one of the many reasons i'm not a fan of the organised religions getting people to suppress normal,healthy desires,creating conflict between people all a mystery to me

Yeah...I mean either have sex now, break up altogether or get married and have sex. Do you REALLY think being married would change her deep conditioned aversion to sex? Maybe...maybe not? Just keep up with your open communication about this issue and see where things go. Things will work out...you'll know what the right thing to do is in time. If you really love her and want to marry her, than do that and work through her issues with sex.
